2 cups fresh or frozen blueberries
¼ cup water (or juice of your choice)
1 T cornstarch
2 T water
Combine blueberries and ¼ c water in small saucepan. Bring to boil, stirring occasionally. Reduce heat and simmer 2 to 3 minutes.
Combine cornstarch and 2 T water. Add to blueberries, stir, and remove from heat. May be served hot or cold. Will last in refrigerator 3-4 days, and may be re-warmed in microwave. Use on pancakes, ice cream, pudding, cereal, or other fruit.
